Choy Sum In Thick Black Sauce

 
Ingredients / Bahan2

600gm Chinese Bok Choy
600 gm Sawi Bok Choy (sawi bunga muda)
100gm Dried Anchovies
100 gm Ikan Bilis
200ml Thick Black Soy Sauce
200 ml Sos Pekat Hitam Soya
1” Aged Ginger
1” Halia Tua
5 Shallots
5 Ulas Bawang Merah
5 Clove of Garlic
5 Labu Bawang Putih
5 pieces Dried Red Chilly
5 Chili Kering
2 Tbsp. of Cooking oil
2 Sudu Besar Minyak Masak
1 Tbsp. of  Corn Powder
1 sudu besar tepung jagung
Salt To Taste
Garan secukup rasa.

Preparation of ingredient / Menyediakan Bahan2
Clean Bok Choy, and don’t separate the stalk
Bersihkan  Sawi bunga “bok Choy” dan jangan asingkan batangnya.
In a blender grind ginger, shallots, garlic and the dried anchovy. Make to a rough paste.
Di kisar kasar sahaja semua bahan seperti halia, bawang putih, bawang merah dan ikan bilis menjadi pes.
Mixed thick black soy sauce with the corn powder
Campurkan Sos pekat soya dengan tepung jagung.

How to cook? / Cara 2 memasaknya.
In a hot wok add in the cooking oil.
Masukan minyak masak kedalam kuali yang telah dipanaskan.
Put in the grinded paste, lower the heat to medium level while stir mix the ingredient gently.
Masukan bahan yang dikisar seperti pes lalu dikacau dengan perlahan2
Add in the thick black soya sauce and corn powders mixed and stir slowly until cook.
Masukan sos soya pekat hitam yang dicampurkan dengan tepong jagung.
Add in Bok Choy and dried chili and continue stir mix the ingredient very gently. Add salt to taste
Masukan Bok Choy, chili kering lalu dikacau perlahan sehingga rata dengan dimasukan garam secukup rasa.
Stir for another  3-4 minutes,  upon fully cooked, Switch off the  heat, and now you can serve it to others.
Kacau perlahan selama 3-4 lagi.
Masakan sudah sedia, dan bolehlah dihidangkan dengan Nasi Panas.

Mushroom In Light Black Pepper Sauce / Cendawan Sos Lada Hitam

Ingredient
Portion 6
  • 300gm of fresh Cockle Mushroom / Cendawan Tiram Segar
  • 100gm of Brocolli / Brokoli
  • 1 Tbsp of Vege Cooking Oil / Olive Oil / Minyak Masak
  • 1 Tbsp of Fine Grind Pepper / Lada Hitam Kisar
  • 2 Tbsp of Black Soy Sauce / Kicap Pekat Masin
  • 4 Cloves of Garlic / Bawang Putih
  • 2 Inch Ginger / Halia
  • 1 Tsp of Corn Flour / Tepung Jagung
  • 200ml water / Air
  • 2 Tsp Salt / Garam
Preparing the Ingredient/Penyedian Bahan2
12 minutes
  • Clean and wash mushroom of dirt / Bersihkan Cendawan
  • Cut Broccoli in chunky shape / Potong Brokoli
  • Grind & Blend  Garlic, Ginger and fine pepper with 100ml of water / Kisar bawang putih,halia dan lada hitam dengan 100ml air
  • Mix corn flour with a bit of water / Gaul tepung jagung dengan air
 How to cook it?/Cara Memasak
12 minutes
  •  In a pre heat wok, add in cooking oil / Panaskan kuali masukan minyak masak
  • Pour in slowly the grind/blended ingredient and stir mix / Masukan bahan yg dikisar dan kacau rata
  • Add in the balance of water and the Black Soy Sauce / Masukan air lebihan dan kicap pekat masin
  • Add in the salt and the pre mix cornflour and stir until sign of thickening of the gravy./ Masukan gaulan tepung jagung untuk memekatkan sos
  • Add in Broccoli let's simmer for another 4 minutes/ Masukan brokoli kacau 4 minit
  • Add in the mushroom and stir gently to cook for another 3 minutes / Masukan Cendawan dan biarkan mendidih selama 3 minit
Ready to serve./ Boleh dihidangkan

Mix Vege Soup Bok Choi Broccoli



Ingredient
  • 300gm  Fresh Broccoli
  • 4 Stalk of Bok Choy
  • 200gm of Cauliflower
  • 1 Potato
  • 100gm of Beef Tenderloin
  • 10 Kampong Chilly
  • 3 Shallot
  • 4 Garlic Clove
  • 1" Ginger
  • 1 Cup of Beef Stock (homemade)
  • 2 Tsp of Salt
  • 1 Tsp Cornstarch
  • 3 Tbsp of Sweet Soy Sauce
  • 2 Tbsp Cooking Oil
  • 1 Tsp of Pepper Corn
  • 1 Tsp of Dried Parsley Flake
  • 200 ml of water
Preparation of Ingredient
20 minutes
  • Slice thinly 1-2" of tenderloin beef and boil with potato to soften while making beef stock.
  • Chunky cut, broccoli,cauliflower,potatoes
  • Clean Bok Choi, kampong chilly 
  • Thinly slice Shallot and Garclic
  • Ginger slice Julienne
  • Dissolve Cornstarch with 2 Tbsp water and mix well with 3 Tbsp of Sweet Soy Sauce
How to cook?
15 minutes
  • Heat the Wok to a medium range.
  • Add in Cooking Oil
  • Put in the slice shallot and Garlic fry to brown
  • Add in potato,sliced beef and water, let's boil for another 5 minutes
  • Add in 200 ml Water and beef stock, wait further for 5 minutes
  • Pour in the dissolved cornstarch,soy sauce and stir mix gently until thicken.
  • Sprinkle in pepper corn and dried parsley flake,
  • Add in salt to taste.
